A twelve-kilo drum in the back, a two-group lever at the front, and a filter brew that changes whenever the roast does.

The roast

Green beans in.
Coffee out, eight days later.

We buy green from two estates in Chikmagalur and one washing station in Yirgacheffe, and roast on Tuesdays. Nothing leaves the shelf under five days off the drum or over three weeks.

Kestrel is run by Nikhil Menon, who spent six years behind a bar in Melbourne before deciding he would rather own the roast than argue about it. Bags are dated on the back, not the front.

The menu

Counter service. Order at the till, we'll bring it over.

Coffee

Espresso ₹150 18g in, 38g out, about 28 seconds. Ask for it longer if you want it longer.
Cortado ₹190 Double shot, 90ml of milk, no foam to speak of.
Flat white ₹220 Full cream by default. Oat adds twenty rupees and works better with the darker roast.
Filter, single origin ₹180 V60, brewed to order. Right now it's the washed Attikan — blackcurrant, a lot of it.
Cold brew ₹240 Sixteen hours on the counter, served black over one big cube.

Kitchen

Butter croissant ₹160 Baked in Frazer Town, in our hands by seven. Gone most days by eleven.
Banana bread ₹180 Thick slice, griddled in butter unless you say otherwise.
Sourdough, avocado, chilli ₹280 Two slices, lemon, byadgi chilli flakes. Add a soft egg for fifty.
Eggs on toast ₹260 Scrambled soft or fried hard. Kitchen stops at 3pm.
